This Inexpensive Mexican-ish Meal Costs Less Than $7

I call this “mexican-ish” because it is not exactly authentic (besides the rice) but it is good and it feeds our whole family with enough leftovers for lunch or dinner.  The rice looks really dark but I promise you everything is really good.  What you see below is a creamy green enchiladas with Spanish rice and black beans (because I thought I had pinto but still good with the black beans which then turned the meal a little south western).  This is a very easy and inexpensive way to have a Mexican inspired meal at home.

Ingredients:

1 lb. cooked chicken shredded (I boiled 2 lrg. boneless, skinless chicken breasts but you can make it even faster with a rotisserie chicken too)

1 pk. flour tortillas (med. size)

2 10 oz. cans Old El Paso green enchilada sauce (or one lrg. one)

1 7oz. can diced green chilis

1 8oz. pkg cream cheese

3/4 cup shredded cheese (?) (just enough to spread over the top)

4 garlic cloves (can use the equivalent of 2 cloves of dehydrated minced garlic)

1/4 med. onion (sweet or yellow)

1 cup uncooked rice (instant or reg., brown or white)

1/2 cup tomato sauce

olive oil (enough to coat pan)

1/2 cup onions

Easy way to make Spanish Rice:

  • Coat a skillet pan w/ oil & add 1 cup uncooked instant rice once oil is heated up

  • stirring constantly brown the rice over med. heat (the rice will have a light golden brown coloring)

  • add the garlic and onions (I use the dehydrated and minced equivalent)

  • cook for another minute or so being careful not to burn it

  • stir in the required amount of water + 1/2 cup of tomato sauce

  • bring to boil then reduce heat and cover following the directions for rice prep

Serve the enchiladas and rice with your choice of canned beans mashed or whole.
